Begin the morning with coffee before enjoying an exclusive visit to the Rutgers Aquaculture Innovation Center, where you'll learn how oysters begin life—from algae cultures to microscopic larvae—in a facility rarely open to the public.

Then head to Sweet Amalia Farms, timed with low tide, for an intimate tour of the oyster farm. Walk the farm, meet the people behind the oysters, and follow their journey from hatchery to harvest while learning why South Jersey has become one of the country's premier oyster-growing regions.

After time to relax back at the Boarding House, gather for an evening of oysters, storytelling, and a multi-course dinner prepared in collaboration at Wild Roots, featuring locally sourced ingredients and Sweet Amalia oysters.
